My son has been asking if I could make khao soi since we came back from Thailand, and as its not readily available in supermarkets I bought from Mae Jum store. I didn't realise when I ordered that a packet would serve 6 so I split the paste and the ingredients. I used 600ml of coconut milk, 300ml of stock, 1.5 tbsp of fish sauce and 1 tbsp of brown sugar (had no palm sugar) I used chicken breast (son won't eat drumsticks) but I think it would be great with fish balls. And I used extra veg plus egg noodles. I don't normally fry food but I tried frying some singapore noodles and they worked quite well as the garnish. It was absolutely delicious and tastes exactly like what we had inrestaurants in Chiang Mai. Its quite mild on spice. We had one version in the night market and it was very spicy - bit too much for us - but I prefer this which has a bit of a kick but not loads. I will probably come back to this store to try other flavoured pastes.
